Breakfast is the most important meal of the day. That’s what they say anyway. I do agree with it. I am trying to have a big breakfast each morning that is high in fibre such as cereal. I do get carried away with white bread sometimes though. I don’t think my stomach can take it.
Since having children we have been buying full fat milk. Prior to that it was low fat milk. Again that used to agree with my stomach better but full fat milk is supposed to be good for the kids. We don’t want to argue with the scientist and so we just buy full fat milk for now.
Recently Vita Coco got in touch with us to try out their new delicious, smooth and dairy free milk. It’s not just any milk, it’s coconut milk, an alternative to normal milk. I wasn’t too sure at the start what to think of it because after so many years I am just used to low and full fat milk. As I do like coconut, we gave it a try. My hubby definitely approved. A bottle was gone within a day. We were challenged to create an original breakfast recipe with Vita Coco Coconut milk. It can be so simple:
Scrambled Egg on Toast
What you need:
- 1 Egg (for one serving)
- Vita Coco Coconut Milk Alternative
- Add a little bit of oil into a pan and wait until hot.
- In the mean time whisk up the egg, milk and add a little bit of salt
- Add to pan and fry to your preferred consistency.
- Toast your bread
- Pour the scrambled egg on top of you toast and add more salt if needed
Et Voila. I was really surprised how nice it is. Such a difference to normal milk and probably way better for the digestive system, too.
