Gnocchi Salad with Courgette & Peppers

 

Wow, I haven’t posted a recipe in ages. But that shows how busy life can be with two little ones. Anyway, today once again I am sharing an easy enough recipe with you and very healthy too. I would love to know in the comments below what you thought of it when you got a chance to cook it.

Ingredients

1 pkt Gnocchi (500g)
1 small courgette
1 red pepper                                                             5 tbsp of olive oil
A garlic clove
1 tbsp wine vinegar
2 tbsp tomato paste
4 tbsp vegetable broth
Salt & Pepper
A bit of Basil

How to prepare

– Cook Gnocchi according to instructions on pack.

– Wash vegetables. Cut the courgette into thin slices, cut the pepper into small pieces and fry them all together in 3 tbsp of olive oil.

DSC06128 Add garlic clove, vinegar, the rest of the oil, tomato paste and vegetable broth and make it into a sauce.
Mix it all together, season it with salt and pepper and garnish it with a bit of basil

– Enjoy this hot or cold.

    I do not know what gnocchi is lol but will Google after this, I do love how yummy the food looks. Thanks for the recipe.

    I’m not normally a huge fan of Gnocchi but this recipe looks lovely and very colourful. Think I need to give Gnocchi a try again.

    Thanks for sharing this recipe, it looks divine – so deep and rich in colour! I’ll have to try it out on the boys, i reckon they’d love it! x
